

{"id":44318,"date":"2022-01-01T19:23:41","date_gmt":"2022-01-01T18:23:41","guid":{"rendered":"https:\/\/gestions-hospitalieres.fr\/?p=44318"},"modified":"2022-02-01T15:48:05","modified_gmt":"2022-02-01T14:48:05","slug":"une-restauration-responsable","status":"publish","type":"post","link":"https:\/\/www.ricom-web8.com\/gestions\/une-restauration-responsable\/","title":{"rendered":"Une restauration responsable"},"content":{"rendered":"<span class=\"span-reading-time rt-reading-time\" style=\"display: block;\"><span class=\"rt-label rt-prefix\">Temps de lecture\u00a0: <\/span> <span class=\"rt-time\"> 3<\/span> <span class=\"rt-label rt-postfix\">minutes<\/span><\/span><p>La d\u00e9marche \u00ab\u2009Mon restau responsable\u2009\u00bb du CHRU de Tours se d\u00e9cline en quatre axes\u2009:<\/p>\n<ul>\n<li>bien-\u00eatre\u2009: \u00e9valuer les am\u00e9nagements d\u00e9di\u00e9s \u00e0 l\u2019accueil des convives et au confort des salles de restauration tout en garantissant la qualit\u00e9 nutritionnelle des menus\u2009;<\/li>\n<li>assiette responsable\u2009: par le biais d\u2019indicateurs, \u00e9valuer l\u2019atteinte des objectifs en termes d\u2019approvisionnement en produits bio, durables ou de proximit\u00e9\u2009;<\/li>\n<li>\u00e9cogestes\u2009: lutter contre le gaspillage, r\u00e9duire les d\u00e9chets, faire des \u00e9conomies d\u2019eau et d\u2019\u00e9nergie, utiliser des produits d\u2019entretien respectueux de l\u2019environnement\u2009;<\/li>\n<li>engagement social et territorial\u2009: travailler avec les acteurs du territoire, am\u00e9liorer les conditions sociales des \u00e9quipes.<\/li>\n<\/ul>\n<p>Le bilan de ces deux ann\u00e9es d\u2019engagement est positif\u00a0:<\/p>\n<ul>\n<li>axe bien-\u00eatre\u2009: les indicateurs montrent que les convives des selfs ont vu leur satisfaction progresser, notamment sur la qualit\u00e9 nutritionnelle et sur celle des locaux\u2009;<\/li>\n<li>axe assiette responsable : la part de l\u2019agriculture responsable dans les approvisionnements des denr\u00e9es alimentaires a progress\u00e9\u2009: en 2019, 6,6\u2009% des produits achet\u00e9s par le CHRU \u00e9taient des produits sous signe de qualit\u00e9 (incluant des produits issus de l\u2019agriculture biologique). Entre 2020 et 2021, ce chiffre est pass\u00e9 de 9\u2009% \u00e0 15\u2009%.<\/li>\n<\/ul>\n<p>Le CHRU de Tours est responsable du march\u00e9 \u00c9picerie pour les ann\u00e9es 2021-2025 UniHA et son attention a port\u00e9 particuli\u00e8rement sur la limitation des perturbateurs endocriniens au sein des produits retenus. Ainsi, plus de 63\u00a0r\u00e9f\u00e9rences sont d\u00e9sormais issues de l\u2019agriculture biologique ou sous signe de qualit\u00e9 selon le cadre de la loi Egalim.<\/p>\n<p>De la m\u00eame mani\u00e8re, une diversification des sources de prot\u00e9ines a \u00e9t\u00e9 engag\u00e9e pour les patients et les convives des selfs\u2009;<\/p>\n<ul>\n<li>axe \u00e9cogestes\u2009: on note une meilleure gestion des d\u00e9chets et une diminution du gaspillage. Des \u00e9conomies d\u2019eau et d\u2019\u00e9nergie ont \u00e9t\u00e9 engag\u00e9es ainsi qu\u2019une r\u00e9flexion sur la composition des produits d\u2019entretien.<br \/>\nPour sensibiliser les convives du self, des actions comme un repas z\u00e9ro d\u00e9chet ont \u00e9t\u00e9 mises en place et ont conduit au maintien de certains \u00e9l\u00e9ments test\u00e9s lors de ces \u00e9v\u00e9nements (sucre et yaourts en vrac\u2026).<br \/>\nPlus largement, un int\u00e9r\u00eat particulier a \u00e9t\u00e9 port\u00e9 \u00e0 la communication aupr\u00e8s des patients et des professionnels pour mettre en valeur les engagements du CHRU (communication plus syst\u00e9matique de la provenance des denr\u00e9es cuisin\u00e9es et servies, travail autour du grammage des plats servis aux patients, en lien avec les di\u00e9t\u00e9ticiennes du service de restauration).<br \/>\nPar ailleurs, les barquettes en surplus sont d\u00e9sormais confi\u00e9es, en plus de la Banque alimentaire, \u00e0 une association venant en aide aux \u00e9tudiants pr\u00e9caires\u2009;<\/li>\n<li>axe engagement social et territorial\u2009: un partenariat avec un \u00e9tablissement d\u2019aide par le travail (Esat) permet d\u2019accueillir des stagiaires issus de cet \u00e9tablissement au sein de l\u2019unit\u00e9 centrale de pr\u00e9paration alimentaire (UCPA), permettant ainsi de renforcer la responsabilit\u00e9 sociale de l\u2019\u00e9tablissement.<\/li>\n<\/ul>\n<h1>Objectifs<\/h1>\n<p>Le travail du CHRU en mati\u00e8re de restauration et de d\u00e9veloppement durable n\u2019est pas termin\u00e9, d\u2019autres objectifs ont \u00e9t\u00e9 fix\u00e9s pour les prochaines ann\u00e9es.<\/p>\n<p>Concernant l\u2019axe Bien-\u00eatre, le d\u00e9ploiement progressif de nouveaux chariots pour les petits d\u00e9jeuners au sein de l\u2019ensemble des services de soins du CHRU (dont neuf en 2021) garantira une meilleure ergonomie pour l\u2019aide h\u00f4teli\u00e8re en charge de la distribution du petit d\u00e9jeuner ainsi qu\u2019une meilleure qualit\u00e9 de service permettant de lutter contre le gaspillage alimentaire.<\/p>\n<p>Dans ce cadre, des caf\u00e9s issus de l\u2019agriculture biologique seront propos\u00e9s aux patients. Dans le m\u00eame temps et conform\u00e9ment aux recommandations nationales r\u00e9centes, la quantit\u00e9 de sel pr\u00e9sente dans les plats servis sera r\u00e9duite, pour les patients comme pour les convives des selfs.<\/p>\n<p>La proportion de produits sous signe de qualit\u00e9 (selon plusieurs labels reconnus) augmentera\u2009: de 15\u2009% en 2021, elle atteindra 18\u2009% en 2022. C\u2019est dans ce cadre qu\u2019un partenariat avec un verger \u00e9coresponsable sera mis en place. Le CHRU s\u2019engagera par ailleurs sur une diversification du pain servi aux patients et aux convives des selfs et internats, en int\u00e9grant une fois par semaine une variante de pain issu de l\u2019agriculture biologique. Cette d\u00e9marche volontaire induit un surco\u00fbt de pr\u00e8s de 15\u00a0000 euros par an pour l\u2019\u00e9tablissement.<\/p>\n<p>Une attention particuli\u00e8re sera port\u00e9e aux cuissons, les cuissons basse temp\u00e9rature seront privil\u00e9gi\u00e9es et mises en \u0153uvre la nuit.
